Brewing guide
This brewing method sets the standard for modern hand brewing. It is seen with the home barista as well as on stage at the world championships. And with good reason, this is a brewing method you must explore!

Fresh beans taste best
Weigh out 32 g of freshly roasted specialty coffee. Grind the coffee medium- fine. We recommend using a grinder with large burrs and not a blender-like coffee grinder. Try a light roast coffee for a fruity taste experience.

The importance of water
Place your coffee filter in the dripper and pre-wet your coffee filter with the 92-96 degree water. Now weigh out 500 g of freshly tapped water. Preferably filtered for limescale for improved coffee taste. Place the dripper on a carafe and now place it on a scale.

It's in the detail
First pour 70 g of water using circular motions, so that all the coffee gets wet. Let bloom for 30 seconds. Then pour on 200 ml of water in circular motions. At 1-1.5 min. add a further 2 x 115 grams. The coffee must not run dry . Desired brewing time 3-3:30 min.

Time to taste
Important… Since a cup of coffee consists of approx. 98.5% water and 1.5% coffee, the quality of the water is crucial for the taste of your coffee. And remember, if your brewing runs through too quickly, you must grind finer and vice versa, if it runs through too slowly, you must grind coarser.
