Funky and juicy

This is an excellent example of a delicious red honey-processed coffee from Costa Rica. Our coffee from Costa Rica is part of the Santuario Innovation Programme. A project whose main goal is to improve living standards through the production of specialty coffees. This is achieved by educating small coffee farmers in countries like Colombia, Costa Rica, Mexico, Brazil, Ethiopia, and El Salvador. It’s a project that has ensured that certain coffee farms in these countries have been in the specialty coffee industry for many years and, together with small farmers, have managed to deliver quality coffee to international customers.

A multi-layered taste experience

Flavour wheel - vinous and tropical fruits

It’s a juicy coffee with great sweetness and a delicate acidity. The aroma is vinous, and the flavor notes remind us of tropical fruits and raisins. It’s a coffee where the many flavor nuances appear in multiple layers. First, a captivating vinous aroma combined with a French nougat sweetness fills us, and the complex taste has nuances that remind us of tropical fruits like the sweetest pineapple and melon. Alongside the tropical fruits, you’ll find notes of raisins and prunes deeper in the layers.

Family-owned farm for 55 years

Our Selected specialty coffee is from the Tres Milagros farm in the Dota-Tarazzú region of Costa Rica. The coffee from here is some of the finest when we talk about specialty coffee. It comes from the Facusse family, who have owned the Tres Milagros farm for 55 years. Since the beginning, the farm has been planted with Bourbon and Caturra, and they are known for being skilled and producing some truly experimental lots, including with less water usage.

Red Honey Processed

An earthquake forced the farmers to think of new water-saving methods

The Red Honey processing method mainly emerged after an earthquake in Costa Rica back in 2008. The earthquake left them almost without water, and they had to think innovatively and look at other water-saving ways to process their coffees. Thus, honey processed coffees emerged. A method that uses less water, removes the skin, and leaves less than 50% of the sugar layer (mucilage) on the berry. A processing method with many processes that gives a very unique coffee taste.

The Red Honey processing method is, compared to traditional processing methods, far more water-saving because the berries are largely processed naturally.

It’s no secret that the Tres Milagros farm is known for producing some truly exclusive coffee with the typical characteristic traits of the Dota-Tarrazu region. In 2011, Mr. Camilo Merizalde and the Facusse family decided to create a very unique specialty coffee program with experience from Finca Santuario Colombia. New varieties like Geisha, Heirloom, Tipica, F1, Villa Sarchi, and many more were planted on the Tres Milagros farm. Today, the farm works with several different processing methods to continuously produce outstanding specialty coffees, and we love it. Our coffee from Costa Rica stands out from our other coffees, especially due to the Red Honey processing method.
