Decaf coffee from the Lomas Altas farm is a coffee from Maria Elena Zapata. Maria, together with her farm, is one of the leading coffee producers in Jalapa. Maria Elena took over the farm in 2021 and, as the new leader, has helped manage the farm and drive it forward with the aim of continuing to produce high-quality coffee.

This coffee is a decaf coffee with an aroma of stone fruits and flavor notes of cane sugar and nuts.

Because water is an extremely limited resource in the area, the berries are harvested and delivered the same day to Primavera, who processes them in Fraijanes and prepares them for export. These lots are remarkably beautiful, which is a sign of an extremely careful and cautious approach to harvesting the berries themselves.

With a focus on high quality

Coffee grown under shade trees

The coffee from the Lomas Altas farm is grown at 1700 masl, using, among other things, spruce and oak as shade trees for the harsh sun. The water they use during cultivation comes from natural water resources.

Maria Elena Zapata aims to continue producing high-quality coffee. And we have to say that these lots are also remarkably beautiful, which is a sign of an extremely careful and cautious approach to harvesting the berries themselves.

Maria Elena Zapata, who owns the farm, also works with Del Paraiso, which is an organization of producers in Jalapa. They work to strengthen the local community by finding partners within specialty and at the same time helping producers to get in touch with current customers. Her focus is, among other things, to create an increased awareness and recognition of producers of specialty coffee, which will help to improve conditions in the local community.

Roasting the beans to perfection is not just about technique, but also about recognizing and appreciating the great work that the coffee farmers’ efforts represent. Therefore, we roast our coffees gently, based on a clear vision that takes into account origin and processing.

We believe that each coffee has unique characteristics that we strive to highlight every day. By roasting lightly, we preserve a wealth of flavor nuances, which means that many will experience our coffees as floral and fruity. In contrast, a dark-roasted coffee will often have a more burnt taste. It is also worth noting that it is more difficult to “hide” any defects in lightly roasted coffees, while a dark-roasted coffee can more easily obscure defects if they exist. In short, price, quality and degree of roasting are often linked, and we work purposefully to ensure that our coffees live up to the highest standards.
