Our organic coffee comes from the Comsa cooperative in the Marcala region. It’s a washed coffee, which gives it a very clean mouthfeel. The flavor is fruity with a lovely interplay between acidity and sweetness. The taste is smooth, marked by peach and caramel.
With care for nature
Our organic coffee from the Comsa cooperative in Honduras is produced under organic standards, with a special focus on growing coffee in better balance with nature and restoring the soil, for example by using shade trees.
Cooperative with great potential
Back in 2001, a group of farmers decided to join forces to produce high-quality coffee. It started with 69 members who formed the cooperative COMSA, short for Café Orgánico Marcala S.A. Their goal was shared: invest in organic production instead of conventional. The Comsa cooperative is still highly innovative and experimental in its approach to different organic methods—always focusing on local plant life. The Marcala area, located in the Montecillos mountain range at 1,200–1,700 meters above sea level, has great potential for producing specialty coffee. Several coffees from this region have won Cup of Excellence awards.
With care for the local community
At Holy Bean, we focus on high quality and only buy specialty coffees. We do this because we know quality and price go hand in hand. The higher the quality, the better price the farmer gets for their raw coffee. That’s why it’s crucial that local farmers are continuously trained and updated with the latest knowledge, so they can keep up with developments in coffee production and deliver the best possible quality.
We believe in quality
Coffee is a fantastic raw product, and we believe it impacts many people when we choose to buy and drink high-quality coffee. High-quality coffee means a higher price and therefore a correspondingly higher wage for farmers in coffee-producing countries. That’s why we select the finest specialty coffees. All coffees are scored by quality, and specialty coffees are those that score the highest. Specialty ranges from 80 points up to 100 points, and very few coffees score above 90 points and thus qualify for Cup of Excellence—as our coffee from Comsa has done several times.
