Nightingale is part of our small series where each coffee carries a name from Hans Christian Andersen’s fairytale universe. The series celebrates craftsmanship, traceability, and the story each green coffee brings with it—just as in the rest of our range.
Three origins united in a gentle roast
The blend components from Brazil, Colombia, and Indonesia create a balanced profile where the natural terroir of three continents meets in one gently roasted cup. The result is a harmonious all-round coffee with soft notes of nuts, a light acidity, and a rounded sweetness.
3 great coffees in one
The coffee from Sul de Minas in Brazil, grown at 800–1500 meters above sea level, is naturally processed, giving it a sweet profile with notes of almond, dried fruit, and dry cocoa. From Huila in Colombia comes the washed-processedcoffee, grown at 1200–1900 meters, contributing a clean and gently acidic character. The Indonesian coffee from western Sumatra, grown at 1100–1500 meters and washed processed, adds depth, low acidity, and nuances of walnut and subtle spice.
Together, the three origins create a balanced and harmonious blend where depth, freshness, and intensity meet in a unified taste experience.
Notes of chocolate and nuts
We believe in coffee’s unique characteristics and work daily to bring out coffee’s natural character. By roasting some of our coffees with a medium roast profile, we add more body and fullness to our coffees. We do this to bring out classic flavor notes like chocolate and nuts while ensuring a light fruitiness and low acidity, which you’ll experience in a coffee like Nightingale.

We roast all our coffees at the cozy micro-roastery in West Funen, and this blend is medium-roasted to achieve a good body. Our certified roaster Sine Klejs Gren works based on principles of thoroughness, immersion, and always with great respect for the craft from the farmer’s experienced hand to roasting and brewing.
