Our decaf coffee from the Lomas Altas farm in the New Oriente region of Guatemala is from Raul Sanchez Agustino, who, along with his farm, is one of the leading figures in coffee production in Jalapa. Raul and the Lomas Altas farm are exceptional, and some of the best coffee that Primevera has received from this region comes from here.

Aroma and flavor notes depend partly on where the coffee is grown and processed, but naturally also on how it is roasted. When we talk about raw coffee, it’s hard to define the notes you get, but at Holy Bean, this decaf coffee has an aroma of stone fruits and flavor notes of cane sugar and nuts.

The coffee from the Lomas Altas farm is grown at 1800 meters above sea level, using pine trees, oaks, and gravileas as shade trees for the harsh sun, and the water used during cultivation comes from natural water resources.

New Method for Decaf Coffee

The path to a good decaf coffee is in the details

The path to a good decaf coffee depends on the details. The most well-known procedure is Swiss Water, where water is used to remove caffeine from the beans. Unfortunately, it also removes some of the original flavor notes in the coffee, which are then added back afterward. In this coffee, a newer and different method is used, based on the use of carbon dioxide. Here, the coffee retains its original flavor notes to a much greater extent because it binds the caffeine when compressed.

Additionally, Raul works with Del Paraiso, an organization of producers in Jalapa, which works to strengthen the local community by finding partners in specialty and helping producers connect with current buyers. His focus includes creating increased awareness and recognition of specialty coffee producers, which will help improve conditions in the local community.
